Celeriac - Mild celery flavour is ideal cooked or pureed as an accompaniment to poultry or game. The stems and leaves can be used as green celery. Use the tuberous roots cooked in soups and stews or raw to add crunch to salads. Approx 120 days to maturity.
Salsify - The "Oyster vegetable", grown for its oyster-like flavour. Wonderful made into soup, steamed or cooked in salted water, with stems intact and served with butter and seasoned to taste. Salsify appears in continental European dishes and is often paired with chicken or other poultry. Salsify flowers are edible, buds having a flavour reminiscent of asparagus. Approx 150 days to maturity
